Monday (Memorial Day) -- BBQ chicken on the grill, veggie skewers, salad
Tuesday -- tomato soup, grilled cheese, cottage cheese
Wednesday -- Burgers on the grill, roasted potatoes, sliced tomatoes
Thursday -- Pasta, salad
Friday -- Open
Saturday -- steak, baked potato, salad

Sunday:-- Home made chicken and corn soup. ( A new recipe for us)
Monday:-- Movies with DH so maybe something quick.
Tuesday:-- Poppy seed chicken with broccoli and rice.
Wednesday:-- Pasta carbonara with salad and garlic bread.
Thursday:-- Chicken with asparagus, cubed roasted potato and hollandaise sauce.
Friday:-- Turkish bread rolls with ham, cheese and tomato, avocado and red onion.
Saturday:-- I am away, DH will make his own.

  • Monday ~ Tacos (from freezer)
  • Tuesday ~ Pork chops; salad
  • Wednesday ~ Chicken quesadillas
  • Thursday (family arrives) ~ Tomato soup; cornbread
  • Friday ~ Fish tacos
  • Saturday ~ BBQ Ribs; potato salad; Mac ‘n Cheese
  • Sunday ~ French chicken; salad; rice

Tonight was Omaha Steaks' hamburgers, baked beans, and roasted potatoes

Sat was pizza from a local place

Monday will be ground beef noodle casserole with green beans

Tues, Wed, Thurs ???????????? :)

It was good!!! No real measurements, just to suit your needs.

Basically.
Boil elbow pasta (macaroni) until just cooked. It will cook more in the oven.
Put pasta into a oven safe dish.
Make your taco mince. I added to the ground beef, minced garlic, a diced onion, grated carrot and some corn and taco seasoning plus a little hot sauce.

Spoon the mince on top of the pasta. Top with grated cheese and place in the oven until the cheese melts.

Top with sliced green onions, diced tomatoes, diced avocado and some sour cream. (I also put some jalapenos on mine).
I served with flour tortilla chips but that is optional. A side salad would be good too.


This was quick to make, I actually put it together in the afternoon and just popped into the oven 20 minutes before needed. It was really good and DH and I would have it again. There were leftovers for his lunch, I put the onions etc in a ziploc and he can put it on once he has reheated the pasta.

Monday:-- Spaghetti (freezer meal)
Tuesday:-- Curried sausages and rice
Wednesday:-- Ham and cheese snitzels, potato and corn
Thursday:-- Sheppards pies and veggies
Friday:-- TBD DH will cook.
Saturday:-- Pan fried ham, cheese tomato sandwiches
