I've been cooking a lot lately too! For both budget and weather related reasons! It is so COLD that firing up the oven/stove always sounds like a good idea. If only there weren't dishes to do afterwards!

Tonight I have several options I could make, but I think I'm going with Mushroom Romano Chicken over rice and Roasted Butternut Squash with Kale and Almond Pecan Parmesan.

Both are new recipes but I have all the fresh ingredients on hand and want to use them up!!! As long as my energy holds out!

I think tacos sound really good. I will do Taco Rice and make some avocado dip to go with the chips we found at Sam's Club.

I'm cooking a skirt steak I marinated last night. I went grocery shopping yesterday and planned a menu for the whole week. It's been awhile, since I've done that. Preplanning just works best for me and I've not done that in a long tim.

I'm doing herb crusted tilapia with a green salad.

I bought a big tub of salad greens so I want to have a nice salad every evening this week.

I'm trying a new sandwich. Well it's not really new because I eat them all the time; a grilled Ruben. I hope it's good. Can't really mess it up can I? LOL

Well...I was supposed to have a meeting, so I was planning on take out for the first time in a long time. I've been cooking every night it seems. I could make pork chops, pilaf and glazed carrots, I guess, but sometimes a girl needs a break. We'll see what dh would like to do.
