1/2 c. butter
1 1/2 c. brown sugar, packed
2 lg. eggs
1 c. pumpkin
1 tsp. vanilla
2 1/2 c. flour
3 tsp. baking powder
1 tsp. salt
1 1/2 tsp pumpkin pie spice
1/4 tsp. ginger
1 c. chopped nuts (optional)
Cream butter and sugar together until fluffy. Beat in eggs. Stir in pumpkin and vanilla. Add flour, baking powder, salt and spice. Blend into butter mixture. Stir in nuts (optional). Drop by Tablespoonsful onto baking sheet, 2" apart. Bake at 375*F for 12-14 minutes. Makes 2 1/2 dozen.
They are good with cream cheese icing! I usually don't put nuts.
