Ok, everyone! Here is the last salad for our Salad of the Week Club. I have saved this one with a little fall influence of Craisins! It is Cranberry Feta Salad and it was submitted by debby. I hope you all have enjoyed all the wonderful salads we have had this Spring and Summer of 2009.

Cranberry Feta Salad

In a bowl combine the following:

Torn leaf lettuce of your choice
Craisins
Sliced or slivered almonds
Feta cheese
When serving add Raspberry vinegrette.

To make this a full meal, add some cooked diced chicken breast. YUM!

This salad reminds me of one I get all the time at Applebess. It is served with Pecan crusted chicken and also mandarin oranges. Here is a recipe for Pecan Crusted Chicken:

* 3/4 cup finely chopped pecans
* 2 tablespoons cornstarch
* 2 tablespoons minced fresh parsley
* 3/4 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon ground mustard
* 1/4 teaspoon cayenne pepper
* 1 egg
* 1 boneless skinless chicken breast, filleted and sliced into thin strips
* 2 tablespoons vegetable oil

1. In a shallow bowl, combine the first seven ingredients. In another shallow bowl, beat the egg.
2. Dip chicken strips in egg, then roll in pecan mixture. In a large skillet cook chicken in oil for 5 -10 minutes or until juices run clear.
