My apologies ladies and gents. My life has been quite busy, I had forgotten to post this month's recipe.
I got this from a blog titled "Alexandra's Kitchen". She has lots of delicious recipes. This one's my favorite. The recipe calls for two servings which works great for me as it's just me and sometimes my boyfriend that I cook for. You can adjust according to your household.
Chicken Legs Baked
2 chicken drumsticks + 2 chicken thighs
kosher salt and freshly cracked pepper (I just used regular black pepper)
1/3 cup white wine
1/3 cup olive oil
1/3 cup freshly grated Parmigian Reggiano
2-3 cloves garlic, minced
a few sprigs fresh thyme
-Preheat oven to 450 degrees. Season chicken on both sides with salt and pepper
-In a small shallow baking dish whisk together the wine, olive oil, half of the cheese and garlic. Throw in thyme sprigs and chicken then toss to coat.
-Turn chicken over skin side up and sprinkle with the rest of the cheese
-put in oven for about 30 minutes (if chicken is browning too fast reduce heat to 400 degrees and continue baking for about another 20 minutes)
