Hi all,

What's cooking at your house today? We will be having my homemade sauce today with spaghetti, veal and breaded zucchini. It smelled so good yesterday while it simmered that I can't wait to eat it!

How about you?

We will be having hotdogs and macaroni and cheese. I have a late meeting tonight and have to feed the kids early before I drop them off at the daycare.

It took all evening to cook up my corned beef- so I only tasted it last night. That will be dinner tonight.

Wanted to share how I made it.

I filled up the pot to boil but then I remembered reading here how someone did their corned beef- by roasting it with orange slices over it.
I did not have any oranges so I opened a can of (concentrated) orange juice and poured some of it over the corned beef- wrapped it in foil and slow roasted it. Oh my goodness- there WAS something about the flavor of that o.j. and the corned beef.

One thing though is it was quite salty. I was thinking when you boil it, some of the salt comes out of the beef as opposed to roasting- the salt stays in. When I roast it again- I'm going to rinse it a bit to get some of the salt out.

But- VERY VERY good flavor!

We have a lot of leftovers that need to be eaten so that is what we will have.

There is a local web sight (but its still good for everyone) called www.youvegotsupper.com and if you sign up they send weekly e-mails w/ 5 recipes in it usually 1 chicken, 1 seafood, 1 south of the border then 2 bonus like dessert, for the guys... they have some good stuff then you can even print off the recepi and shopping list

Lisa-you are doing so good cooking already
