Must look at menus for December, lots of salad and easy meals here. I really must concentrate on the week between Christmas and New Years. Last year I planned poorly so want to be more aware this year.

We had our local meal kits for three nights this past week. Greek meatballs, Asian Tuna sandwiches, and Garlic and Lemon Chicken.

Nothing fancy for the up coming week: Egg/Veggie Fried Rice, Crab (imitation) Quiche (from the Daily Connoisseur), Tacos, Sausage Fritatta, .... and leftovers.

Christmas Day we three decided on ..... drum roll ... meatloaf and macaroni and cheese! I have an idea for a veggie tray and rolls. For dessert I settled on The Minimal Mom's recipe for Pumpkin Dump Cake!

Crab Quiche with Herbed Cheese (scroll down the page some)

It's a staple in my kitchen from Fall and through the winter -- especially since it's something I can adapt for just one chicken breast. I often use fresh apples, in place of the dried, since I don't keep dried apples in my pantry, but most often have a fresh apple in my crisper drawer. And, I'll use diced sweet onion, in lieu of the green onion, too.

Last week! We just returned from our Christmas visit with DD and family. Her menu planning is fabulous! My DSonIL actually did most of the cooking. I'm not sure which was my favorite, the sauerbraten or the smoked beef brisket.

December 28 – January 2
  • Wednesday ~ Asian chicken salad (from freezer)
  • Thursday ~ Salmon, salad
  • Friday (New Year’s Eve) ~ Steak, salad
  • Saturday (New Year’s Day) ~ Sausalito sandwiches (chicken from freezer)
  • Sunday ~ Chicken 'n Dumplings

Sausalito sandwich sounds wonderful. We have a market that sells Sausalito turkey in their deli.

Have not been cooking since Oct but did make Dh a list of items in the freezer. Drives me batty because he waits till the last minute to think about what to make. No thought that there is prep and defrost time. But I am not the one cooking. lol
