Welcome 2024!

Here's our plan for the first week of the New Year!

1/1 Monday~ Pork Roast, Sauerkraut, Kielbasa and Mashed Potatoes
1/2 Tuesday~Tacos
1/3 Wednesday~Chicken Alfredo over Penne and Salad
1/4 Thursday~Dinner out after M's scholarship award ceremony
1/5 Friday~Veal Cutlets, Mashed Potatoes, Gravy and Green Beans
1/6 Saturday~Beef Noodle Casserole

I have this for plans:

* For New Year's Day- baked salmon, black eyed pea salad, flavored rice, steamed broccoli.
Black eyed peas for luck in 2024.
Rice for Fortune in 2024
The amount will allow for at least 2 dinners.

* Will make ham and potato chowder from the Christmas ham bone. This will be lunches for the week. I will also take a container of chowder to my niece's family- as they were the ones that provided the ham bone.

Here we go, January! This is the plan, but it is likely to change, if I need to make a Michigan run or two during the week.

Jan. 1 - 7, 2024
Sunday (NYE)
: sauteed squash or pumpkin ravioli, terriyaki marinated steak bites wrapped in crescent roll triangle with sliced waterchestnut, charcuterie, salad
Monday: salad, stuffed acorn squash
Tuesday: salad, tortolini with ham and peas in light cream sauce
Wednesday: salad, split pea and ham soup, crusty bread
Thursday: baked fish, roasted potato wedges, coleslaw
Friday: salad, pizza
Saturday: salad, fruited chicken, brown rice
Sunday: turkey breast tenderloin, stuffing or rice, cranberry sauce, vegetable

Friday: leftovers
Saturday: italian sausage with spaghetti
Sunday: pot roast in crock pot, potatoes, carrots, salad

Tuesday, Satay chicken with rice or noodles
Wednesday, sausages and pasta with bacon
Thursday, chicken schnitzels with ham, cheese and cubed potatoes
Friday, French onion mince with peas and mashed potato
Saturday something quick.
Sunday, ham, cheese and tomato croissants

Monday - Chicken Pot Pie
Tuesday - Ribs, Baked Beans, Mashed Potatoes
Wednesday - Butterbeans, Ham (Fellowship supper @ church)
Thursday - Rotisserie chicken, Salad Friday - Creamy Sausage Pasta
Saturday - moving DD to our house. Hoping to get a meal made ahead for Saturday night.
Sunday - Beef Tips with Rice, Peas, Fried Okra

Fri - Leftover Beans and Weenies
Sat - Sun - I was at my sister's and the men here had things to choose from
Mon - Quiche
Tues - Cheesy Tuna Noodles
Wed - Tacos
Thurs - Grilled Sandwiches/Soup

Eating out of the freezer/pantry ....

Tacos on my menu tonight. LC1‘s son will be here after school before his first wrestling practice and he likes Tacos. LC said we have everything we need for it.

Because of the snow and frigid temps that have headed our way, I did my menu planning yesterday and stocked up on a few items that I'd need for the next 12 days.

Jan. 11 - 23, 2024
Thursday
: fruited chicken (did not make it as planned last week), brown rice, salad dinner out with girlfriends
Friday: chicken a'la king using leftover chicken, peas, and brown rice
Saturday: italian sausage with spaghetti leftover chicken a'la king, salad
Sunday: pot roast in crock pot, potatoes, carrots, salad
Monday: maccaroni & cheese with shredded BBQ beef (leftover pot roast), salad or coleslaw
Tuesday: italian sausage, spaghetti, salad
Wednesday: oven roasted chicken breast, rice or stuffing, salad, green beans
Thursday: chicken pot pie, salad
Friday: pizza, tossed salad
Saturday: lasagna or cavatapi, tossed salad, garlic bread
Sunday & Monday: leftovers
Tuesday: vacation begins

Your Chicken A'la King just led me down a rabbit hole to a whole bunch of comfort food when I did a search for a recipe. I loved Chicken A'la King as a kid and was just talking about it a few weeks ago. I'm definitely making some this coming week.

We did a big shop yesterday to prepare for the arctic temps and such. DD and I went with DH and we made the list and meal plan as well. I think we shopped for 7-8 meals. They may change day by day, but i'll just come back and update if so.

1/13- BBQ Beef sandwiches with augratin potatoes
1/14- Chicken Fajitas
1/15- Chili with cornbread
1/16- Chicken and Dumplings
1/17- (DH Ball Committee Meeting) Fettuccini Alfredo with green beans
1/18- (Hair appt) Country Pasta (may end up with Fajitas instead)
1/19- Only the boys home (DH and DD in Waynesville- Me at work xmas party)
1/20- Country Pasta
1/21- Meatloaf with mashed potatoes

Your Chicken A'la King just led me down a rabbit hole to a whole bunch of comfort food when I did a search for a recipe. I loved Chicken A'la King as a kid and was just talking about it a few weeks ago. I'm definitely making some this coming week.
I use the recipe that's in the Betty Crocker Red Cookbook from the 1970s, but omit the mushrooms (not a fan in a'la King) and add frozen peas (or peas & carrots, depeding on what I have on hand). I make a 1/2 recipe, which is plenty for me for dinner, lunch the following day, and still have some leftovers. I usually serve it over toast or biscuits, but had some leftover long grain rice from a previous meal, so used that and it was delicious! Definitely comfort food!

Tuesday - Spaghetti and Meatballs for DH, DD31, and my sister (DS20 and I will be at the hospital)
Wednesday - Burgers out
Thursday - Potato Soup, salad

I'm gonna look up a'la King @Lori K :)

Meals I have planned this week:

For lunches: Chili and Cornbread
Dinners:
Baked salmon, asparagus
Steak, roasted potatoes, salad
Chicken breasts topped with pesto, sun dried tomatoes and cheddar cheese.
Also have ladies dinner group at a new restaurant- Japanese, Mexican fusion.
Should be interesting!
