Week One of the Cook off is appetizers. Parties and carry ins abound during the holiday season. It's time to experiment with appetizer recipes. In this thread post your favorite or perhaps a new one that you are going to try. Then you and whoever else wants to give it a trial run can do so during this week. Then we will come back and post reviews and ratings for the appetizers listed here!!

Okay....opening Week One....for recipes....post your recipe so others that want to try them can get ingredients for Week One Appetizers.....

PLEASE SAVE COMMENTS etc...until the ACTUAL WEEK ONE (July4-10)

During that week.... comments, reviews etc can be posted....and at the end of that week I will put up a poll in another thread for votes for the recipes....Thanks!

SALMON CUCUMBER APPETIZER

1 slice salmon (smoked /cured?), diced
1 (3 oz.) pkg. cream cheese, softened
1 tbsp. lemon juice
1/4 tsp. salt
1/4 tsp. dried dill weed (fresh dill will be much better)
2 cucumbers

Blend together salmon, cream cheese, lemon juice, salt, dill and dash pepper. Slice cucumber 1/4" thick. Spread salmon mixture (about 1 teaspoon) on each slice. Garnish with small piece of dill or a little slice of salmon and dill. Cover and chill until ready to serve. Makes about 48.

FRESH VEGGIE DIP
1 C mayo
1tsp minced onion
1tsp vinegar
1tsp horseradis
1tsp garlic salt
1 tsp curry powder

Mix thoroughly and servie with fresh veggies!

I usually make a double batch to make the dip and veggies come out more even.
I use:
1 bag baby carrots
2 green peppers (sliced)
1 head califlour
2 bunches green onions

They now sell little plastic dip cups at Dollar General.

This is a staple at our "Church " family (mom's side) Christmas

Hot Virginia Dip
1 cup chopped pecans
2tsp butter
*saute pecans in butter and set aside

16oz cream chees
4T milk
5oz dried beef (usually in a jar or bag near canned meat. Chopped into small pieces )
1 tsp garlic salt
1 C. Sour cream
4 tsp onion, minced

Mix Ingram. (Not nuts) in 1 1/2 qt baking dish and top w/ pecans. Bake at 350 for 20 min. Serve w/ crackers. Can be stored in fridge before cooking if needed.

Bacon - Tomato Dip
1 C mayo
1C Sour Cream
1 bottle REAL Baon Bits
1 bunch green onions (chopped fine)
1 tomato (chopped fine)

Mix, chill for an hour or so

Serve with Ritz Crackers

This is a year round favorite for my family:

Beefy Taco Dip

1- 8 ounce package of cream cheese, softened

1 cup sour cream

3/4 cup mayonnaise

1 pound ground beef

1 envelope taco seasoning mix (use spicy for some extra kick)

1 (8 ounce) can of tomato sauce

2 cups shredded cheddar or taco cheese

4 cups shredded lettuce

2 medium tomatoes, diced

1 small onion, diced

1 medium green pepper, diced

Tortilla chips

In a small mixing bowl, beat the cream cheese, sour cream and mayonnaise until smooth. Spread on a 12-14 inch pizza pan or serving dish. Refrigerate for one hour. In a saucepan over medium heat, brown beef; drain. Add taco seasoning and tomato sauce; cook and stir for 5 minutes. Cool completely. Spread over cream cheese layer. Refrigerate. Just before serving, sprinkle with cheese, lettuce, tomatoes, onions, and green peppers. Serve with chips.

Double Tomato Bruschetta

These are delicious, especially with home grown tomatoes! You can substitute dried basil, but fresh is best.

Ingredients

6 roma (plum) tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil
3 cloves minced garlic
1/4 cup olive oil
2 T balsamic vinegar
1/4 cup fresh basil, stems removed
1/4 tsp salt
1/4 tsp ground black pepper
1 French baguette
2 C shredded mozzarella cheese

Directions

1. Preheat oven on broiler setting.

2. In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.

3. Cut the baguette into 3/4 inch slices. On a baking sheet arrange the baguette slices in a single layer. Broil for 1 to 2 minutes, until slightly brown

4. Divide the tomato mixture evenly over the baguette slices. Top the slices with mozzarella cheese.

5. Broil for 5 minutes, or until cheese is melted.

Creamy Bean Dip

1 15 ounce can refried beans
4 ounces cream cheese at room temperature
1 cup sour cream
1 package taco seasoning mix
1/2 pound Velveeta or sharp cheddar cheese cutinto cubes

Preheat oven to 350. In a large bowl blend beans, cream cheese, sour cream and sesoning mix. Fold in cheese cubes. Scoop dip into a 2 quart casserole dish and bake for 30 minutes until cheese melts and dip is warmed through.

Avocado & Sweet Chilli Dip

3 Avocados
1 cup of sweet chilli sauce (but alter this to suit your taste - I like lots!)
Sour Cream
Tomatos
Cheddar Cheese

Scoop out the avocado flesh and mix with the sweet chilli sauce. Spread the sour cream over the top. Top with sliced tomato (without the seeds) and grate cheddar cheese over the top.

Soooo more-ish :)

Bean Nacho Bowls

Tostitos Scoops tortilla chips
refried beans
shredded cheddar cheese

You can use the beans right out of the can or season to suit your taste. Just fill each scoop with beans, top with cheese, and bake at 350 until cheese is melted.

Cheesy Potato Skins

4 potatoes, baked and halved
1/2 cup shredded Cheddar cheese
1/2 cup shredded mozzarella cheese
2 green onions, chopped
4 teaspoon bacon bits

Place potatoes on baking sheet; sprinkle with cheeses. Top with onions and bacon; heat under broiler until cheese melts. Serves 4

Good with ranch dressing

Zucchini squares

Zucchini Squares

3 cups zucchini, very thinly sliced
1/4 cup minced onion
2 Tbsp parsley, chopped
1/2 tsp oregano
3/4 tsp salt
1 clove garlic, minced
1/2 cup grated Parmesan cheese
4 eggs, slightly beaten
1 cup flour
1-1/2 tsp baking powder
1/2 tsp seasoned salt
1/8 tsp pepper
1 Tbsp melted butter
1/2 cup vegetable oil

In large bowl, mix zucchini, onion, parsley, salt, garlic and cheese.

Stir in eggs and mix well.

In a small bowl, combine flour, baking powder, seasoned salt, and pepper. Add to zucchini mix. Then add melted butter and oil.

Pour into greased 9 x 13 x 2" baking dish. Bake at 350° for 25 minutes or until golden.
Cut into squares and serve warm.

Makes about 4 dozen

Can be frozen.

Cheese Spread

8 ounce pkg. cream cheese softened
1 tablespoon French salad dressng
1 tablespoon chili sauce
3 to 4 drops Worcestershire sauce
garlic powder to taste

Blend all together until smooth.
Good with crackers or french bread.

Makes 1 cup

Snappy Asparagus Dip

1 lb asparagus trimmed, cooked and puredd
1 cup sour cream
1/2 cup salsa
1/8 teasppon lime juice
cayenne pepper, salt and pepper to taste

Combine all together, mix well. Cover and refrigerate until chilled. Makes 2 1/2 cups.

Good with fresh veggies or tortilla chips

Nacho Dip

1 large pack of velveeta cheese cut into cubes
1 jar picante
2 lbs ground beef/turkey (I have used both together)
1/2 tsp Chili powder - can add more if you like
1 large can diced tomatoes
* Optional - 1 pack of taco seasoning if you want of a mexican flavoring.


Melt cheese over low heat add rest of ingredients, let simmer on stove for about an hour or pour into crock pot and let cook on high for a couple of hours or low for several hours. Stir every so often.

Serve with favorite chips

Zippy Cheese Log

2 packages (8 ounces each) cream cheese softened
1 cup small curd cottage cheese
1 envelope (1 ounce) Parmesan Italian salad dressing mix
4 tablespoons minced fresh parsley divided
1/2 cup minced fully cooked ham
1/2 cup chopped walnuts
Assorted crackers

In a mixing bowl, beat cream cheese, cottage cheese and salad dressing mix until smooth. Line the bottom and sides of a 13X9 pan with waxed paper. Spread cheese mixture evenly in pan. Cover and refrigerate for 1 hour. Remove waxed paper with cheese from pan. Sprinkle 2 tablespoons parsley in a 13X1" strip 1/2" from one long side. Sprinkle ham over remaining cheese mixture. Starting with parsley edge, carefully roll up jelly-roll style. Combine walnuts and remaining parsley; roll log in parsley mixture. Cut log in half; wrap and refrigerater for at least 4 hours.
Makes 2 cheese logs (approx. 1 3/4 cups each)

Brown Sugar Smokies - Wrap little smokies in bacon and smother in brown sugar before baking....UMM!

I've done these in the crockpot too - just layering the wrapped smokies with generous amounts of brown sugar - but both ways work just fine!

Bacon Wrapped Crackers - As PDub mentions these have NO nutritional value but boy are they good! Is anything wrapped in bacon ever NOT good? Don't think so!

This one is just too yummy! You do need to like olives though! I have also ommitted the olives and amped up the cheese, added garlic powder and made some really yummy garlic bread!
